Tell us the origin story behind Saints + Council, including the name.
This restaurant is my mission and my passion. While there are many great restaurants and plenty with a good culture, this isn’t always the standard in our industry. Like many, I worked in the restaurant industry through college and was fortunate to be a part of a team that genuinely had each other’s best interests at heart. Together, we created an environment that was positive, uplifting, and supportive. Since those days, I’ve wanted to recreate and even exceed that esprit de corps –– a culture built on strength and virtuous values. The name represents the highest and best in all of us — the desire to fulfill who we are meant to be. It’s not just good friends coming together, though that’s certainly a part of it; it’s friends lifting each other up to spur on greatness in a world that has experienced weariness and discouragement. It is not just enjoying delicious craft beverages and exceptional chef-driven cuisine, but doing it in a space that encourages fellowship and camaraderie.
What’s the overall vibe like at Saints + Council?
The vibe at Saints + Council is elevated and sophisticated, but also comfortable, fun, and energetic. From the moment you cross the threshold, you can feel the energy from the music, lighting, decor, food, and the spirit of our employees. You are greeted by our floor-to-ceiling stone fireplace, but our dramatic 30-guest island bar takes center stage. The space offers a blend of tables, cozy booths, living room pods, and a patio unlike any other in Atlanta. All of this culminates to create the perfect setting for any occasion. It’s like an extension of your living room –– a place to gather, feel at home, and enjoy an exceptional experience.
What’s the best business-related advice you’ve ever received?
Early in my career, I was told to be authentic. I really can’t imagine anything more important in this industry than true authenticity. It starts with how we treat our employees and extends to genuine care for our guests. In this competitive landscape, employees have a choice. My hope is that they choose to work alongside us –– not just because our compensation is competitive, but because they align with our values of integrity, excellence, respect, goodness, gratitude, fun and stewardship.
Why is it important for you to offer a seasonal menu to your guests? Do you have a favorite dish or beverage?
Food doesn’t have to be complicated. A great dish doesn’t need dozens of ingredients or inventive techniques. One of the best salads I’ve ever had consisted of just four ingredients. It’s all about choosing quality ingredients and preparing them with great care and intention. Our menu constantly evolves to serve not only the freshest but the most delicious and flavorful foods. One of my favorite dishes is the Classic Dutch Baby, a staple on our brunch menu and the original inspiration for the culinary direction of Saints + Council: elevated comfort food. My favorite drink on the menu is “The Day of Reckoning” — it’s unexpected harmony of blueberry, balsamic and rye with the brightness of fresh lime is reminiscent of our concept: unique, yet nostalgic and elevated, yet approachable.
